Chef Suroor Khan talks about Haleem/Khichda of Rampur, India
Khansama or chef Suroor Khan of Rampur, India, talks about a special preparation of Rampur, the Haleem or Khichda, which is a savory breakfast dish made with barley, wheat, lentils, rice and meat, usually cooked overnight. Chef Suroor introduces us to the eatery of Babbu bhai in Rampur where khichda is served every morning, consumed by almost 500 customers each day. This interview is part of the documentary Dastarkhwan-e Rampur (A Feast in Rampur) tracing the cultural history of north India’s Rampur town through its food and culinary heritage.
